India has a special relationship with sweets. Collectively called "Mithai", they are an essential part of every celebration, festival, and important meal. Each region has its specialties, and together they form one of the richest dessert repertoires in the world.
Gulab Jamun: the king of Indian desserts
Balls made from milk powder (khoya), fried until golden and then soaked in syrup perfumed with rose water and cardamom. Soft, fluffy, sweet. Served hot and irresistible. Modern versions exist with pistachio filling or sugar-free.
Rasgulla: the pride of Bengal
White, spongy balls of fresh cheese (chenna) cooked in light syrup. Light texture and not too sweet, considered one of India most sophisticated desserts. Originally from Odisha and popularized in Bengal.

Jalebi: the crispy sweet treat
Spirals of fermented batter fried until golden and then bathed in syrup. Unique texture: crispy outside, juicy inside. Eaten hot with milk or as street snack. Pakistanis and Arabs have similar versions (Zalabia).

Kulfi: the original ice cream of India
The precursor to modern ice cream. Milk slowly reduced for hours, then frozen in conical molds. Denser and creamier than Western ice cream. Traditional flavors: cardamom, pistachio, mango, rose, saffron.
Barfi: milk sweets in squares
Dense sweets made from khoya (reduced milk) with flavors like cardamom, coconut, pistachio, or cocoa. Cut into squares or diamonds, often decorated with edible silver foil. Essential at weddings and celebrations.
Ladoo: round festive sweets
Sweet balls made from chickpea flour, ghee, sugar, and dried fruits. There are dozens of varieties. Motichoor Ladoo and Besan Ladoo are the most famous. Offered as prasad in Hindu temples.
Halwa: the comforting sweet
Thick pudding made with semolina (sooji), carrot (gajar), or pumpkin, cooked with ghee, sugar, and dried fruits. Gajar ka Halwa is famous in Punjab during winter.
Kheer: Indian rice pudding
Rice slowly cooked in milk with cardamom, saffron, raisins, and nuts. Every culture has its version, but the Indian one is especially aromatic. Served cold or hot.
Lassi: yogurt drink-dessert
Although technically a drink, mango or rose Lassi is practically a liquid dessert. Refreshing, creamy, and perfect after a spicy meal.
